Every Dutch café serves one and every grandmother claims her recipe is definitive.
Dutch apple cake — a deep, cinnamon-spiced apple filling in a buttery pastry shell, served warm with thick whipped cream. The most ordered dessert in Dutch cafés.
Make pastry: rub flour, butter and half sugar. Add egg. Chill 30 minutes.
Mix apples, remaining sugar, cinnamon, raisins and lemon.
Line a deep 24cm tin with two thirds of pastry. Fill with apples.
Top with pastry strips in a lattice. Brush with egg.
Bake at 175°C for 60 minutes. Dust with icing sugar. Serve with cream.
Use a mix of tart and sweet apples for the best flavour balance.
