Pisto Manchego

Spain

Pisto Manchego hails from the La Mancha region and remains a summer staple, using vegetables at their seasonal peak.

A rustic Spanish vegetable stew from La Mancha, slowly cooked down until sweet and jammy — the Spanish cousin of French ratatouille, often topped with a fried egg.

Chef's Tip

Cook low and slow rather than rushing — pisto needs time for the vegetables to break down into a jammy stew.
