Cauliflower cheese is a British classic, served on the Sunday roast table and also eaten as a supper dish on its own. Mature Cheddar gives it the best flavour.
Tender cauliflower baked in a rich, mustardy cheese sauce with a golden crust. A Sunday roast classic.
Heat the oven to 200°C (180°C fan). Boil the cauliflower for 5-6 minutes until just tender, then drain very well.
Melt the butter, stir in the flour and cook for 1 minute. Gradually whisk in the milk and simmer for 6-8 minutes until thick.
Off the heat, stir in two-thirds of the cheese, the mustard, nutmeg, salt and pepper.
Put the cauliflower in a baking dish, pour over the sauce and top with the remaining cheese and breadcrumbs.
Bake for 20-25 minutes until bubbling and golden.
Drain the cauliflower thoroughly and let it steam dry. Water is the enemy of a thick sauce.
