Kofta b'bandura (kofta in tomato sauce) is one of the most common home-cooked dishes across the Levant. Every family has their own spice blend. In Jordan it is considered essential home cooking, eaten weekly in households across the country.
Jordan's homestyle spiced meatballs in tomato sauce — lamb kofta baked in a rich tomato sauce with onions and olive oil until the sauce is thick and the meatballs are tender. Simple and deeply satisfying.
Mix lamb with grated onion, parsley and spices. Season generously.
Form into oval kofta shapes. Place in a baking dish.
Arrange sliced onion around the kofta.
Pour blended tomatoes over. Drizzle with olive oil.
Bake at 190°C for 35-40 minutes until sauce is thick and kofta are cooked through.
Serve with flatbread to mop up the sauce.
The kofta must be placed in a single layer so they cook evenly and the tomato sauce reduces properly around them.
