Sold from enormous trays at Turkish bakeries. The smell of freshly baked börek is the scent of Turkish mornings.
Flaky pastry filled with white cheese and spinach — layers of yufka dough brushed with butter and eggs, baked until golden and crispy. Found in every Turkish bakery from dawn.
Mix cheese and spinach. Whisk eggs with milk.
Layer yufka sheets in a buttered tray, brushing each with butter and egg mix.
Add filling halfway through. Continue layering.
Score top. Pour remaining egg mix over. Top with sesame. Bake at 180°C for 40 minutes.
Score before baking, not after — cutting into hot börek shatters the layers.
