A Beirut classic. The name means palace bread — it was created for the courts of the Ottoman empire.
Lebanese palace bread — layers of caramelised toast soaked in rose water syrup, topped with ashta clotted cream. Beirut's most elegant dessert.
Make caramel: cook sugar until very dark amber.
Toast bread until very crispy. Arrange in a serving dish.
Add water and rose water to caramel carefully. Pour over toast.
Refrigerate until soaked and cold. Top with ashta and pistachios.
The caramel must be very dark — pale caramel makes the dessert too sweet without depth.
