Tahini Sauce

Lebanon

Tahini, ground sesame paste, has been central to Middle Eastern cooking for thousands of years. Tarator, a tahini sauce, is served all over Lebanon with fish and falafel.

A nutty, lemony sesame sauce with garlic, thinned with water to a pourable cream. Drizzle on falafel, shawarma and roasted vegetables.

Ingredients

100gtahini
2lemons, juiced
1garlic clove, crushed
60-80mlice-cold water
1/2 tspsalt
1 tbspfresh parsley, finely chopped (optional)

Method

1

Whisk the tahini and lemon juice in a bowl — it will seize and thicken at first.

2

Add the garlic and salt, then whisk in the cold water a little at a time until smooth, pale and pourable.

3

Stir in the parsley if using, and adjust the lemon and salt.

4

Serve with falafel, shawarma, roast cauliflower or salads. Keeps for 5 days in the fridge.

Chef's Tip

Don't panic when the tahini looks curdled when you add the lemon; it smooths out as you add the water.
