Ingredients

4ripe tomatoes, very finely chopped
1red pepper, finely chopped
1small onion, very finely chopped
2green chillies, finely chopped
1 small bunchfresh parsley, finely chopped
2 tbsppomegranate molasses
2 tbspolive oil
1 tbsptomato paste
1 tspAleppo pepper (pul biber)
1/2 tspsalt

Method

1

Chop all the vegetables and parsley as finely as you can. Put them in a colander with the salt for 10 minutes and press out the juice.

2

Mix the vegetables with the tomato paste, pomegranate molasses, olive oil and Aleppo pepper.

3

Taste and adjust the heat and sourness.

4

Serve cold with kebabs, lahmacun, bread or grilled meat.

Chef's Tip

The chopping is the work. Fine, even pieces give the right texture, a cross between a salsa and a pâté.
