Yemeni hospitality begins with maraq. Guests are served small cups while the main dishes are prepared.
Yemeni clear lamb broth — a delicate, golden soup simmered with whole spices and drunk from small cups as a starter before the main meal.
Cover lamb with cold water. Bring to boil. Skim very thoroughly.
Add onion, tomatoes, hawaij and turmeric. Simmer 1.5 hours.
Strain. Squeeze lime into broth. Garnish with coriander.
Serve in cups before the main meal.
Skim obsessively in the first 30 minutes — clarity is what maraq is about.
