Pico de Gallo

Mexico

'Pico de gallo' means 'rooster's beak' in Spanish. It is also called salsa fresca or salsa mexicana, because the red tomato, white onion and green chilli are the colours of the Mexican flag.

A fresh, chunky salsa of ripe tomato, onion, chilli, coriander and lime. Mexico's everyday table salsa for tacos and fajitas.

Ingredients

4ripe tomatoes, deseeded and finely diced
1/2white onion, finely diced
1-2jalapeño or serrano chillies, finely chopped
1 small bunchfresh coriander, chopped
2limes, juiced
1/2 tspsalt

Method

1

Put the tomatoes, onion, chilli and coriander in a bowl.

2

Add the lime juice and salt and toss gently.

3

Leave for 15 minutes so the flavours meet, then taste and adjust the salt, lime and heat.

4

Serve fresh the same day with tacos, fajitas, nachos or grilled meat.

Chef's Tip

Deseed the tomatoes so the pico stays chunky and doesn't go watery. Rinse the diced onion in cold water for a milder taste.
