Quesadillas have been a staple of Mexican cooking since long before Spanish colonisation, their name derived simply from queso, the Spanish word for cheese.
Tortillas folded around melted cheese and griddled until golden and crisp — a simple, satisfying Mexican staple, endlessly adaptable with fillings.
Sprinkle cheese, onion and jalapeño over half of each tortilla.
Fold the tortilla over to enclose the filling.
Cook on a dry griddle for 2-3 minutes per side until golden and the cheese has fully melted.
Cut into wedges and serve with salsa and coriander.
Keep the heat moderate — too high and the tortilla burns before the cheese has time to properly melt.
