American BBQ is regional religion. Memphis, Kansas City, Texas and Carolina all disagree on every detail.
American slow-smoked pork ribs — St Louis or baby back ribs rubbed with spice, smoked for hours until fall-off-the-bone tender, glazed with BBQ sauce.
Mix dry rub. Coat ribs. Refrigerate 2 hours.
Smoke at 110°C for 3 hours. Wrap in foil with a splash of apple juice. Cook 1 more hour.
Unwrap. Glaze with BBQ sauce. Cook 30 minutes unwrapped.
The 3-2-1 method — 3 hours smoke, 2 hours wrapped, 1 glazed — reliably produces fall-off-the-bone ribs.
