Baked beans have been cooked in America since colonial times. In Boston they were baked with molasses and salt pork; at a barbecue, they are often cooked with bacon and a smoky sauce.
Sweet, smoky baked beans with bacon, molasses and mustard. The classic barbecue side.
Heat the oven to 160°C (140°C fan). Fry the bacon in an ovenproof pot until crisp, then cook the onion and garlic in the fat for 5 minutes.
Stir in the ketchup, molasses, sugar, mustard, vinegar, paprika and Worcestershire sauce.
Add the beans and 100ml of water and stir to combine.
Bake uncovered for 1 hour to 1 hour 30 minutes, stirring now and then, until thick and sticky. Rest for 10 minutes before serving.
Let the beans bake uncovered so the sauce reduces and caramelises on top.
