Australian chocolate-coconut cake — squares of vanilla sponge dipped in chocolate icing and rolled in desiccated coconut. The national cake of Australia.
Make vanilla sponge. Bake at 180°C for 25 minutes. Cool completely. Cut into squares.
Make chocolate icing: mix icing sugar, cocoa and boiling water.
Dip each square in chocolate icing. Roll in coconut.
Lamingtons must be made from a day-old cake — fresh sponge crumbles when dipped.
