Created by Indian indentured workers brought to Fiji's sugar plantations. Now integral to Fijian culture.
Fijian Indian curry — brought by indentured Indian labourers in the 1870s, Fijian curry is a distinct style with coconut cream, roti and local vegetables. A unique Indo-Fijian cuisine.
Fry onion, garlic and ginger. Add curry powder. Cook 2 minutes.
Add meat. Brown. Add tomatoes and coconut cream.
Simmer 25-30 minutes until thick.
Serve with roti.
The coconut cream is the Fijian addition — it softens the spice and adds richness.
