New Zealand's native sweet potato has been grown by Māori since their arrival from Polynesia. Now a national staple found at every BBQ.
New Zealand sweet potato fries — kumara cut into wedges, seasoned with salt and rosemary and roasted or fried until golden and caramelised. New Zealand's answer to chips.
Peel and cut kumara into wedges.
Toss with oil, salt and rosemary. Spread on a tray.
Roast at 210°C for 25-30 minutes, turning once.
Serve with sour cream and sweet chilli.
Don't crowd the tray — kumara needs space to roast, not steam.
