Mondongo is a weekend staple across Colombia, often slow-cooked for family gatherings that stretch into the afternoon.
A hearty Colombian tripe stew simmered for hours with potato, corn and vegetables — deeply savoury comfort food traditionally reserved for weekend family gatherings.
Boil tripe for 1.5-2 hours until tender, changing the water once to remove excess odour.
Sauté onion and tomato until soft.
Add tripe, cumin and enough water to cover. Simmer 45 minutes.
Add potatoes and corn, simmering a further 30 minutes until vegetables are tender. Serve with rice.
Changing the tripe's cooking water partway through removes any strong odour and results in a cleaner-tasting stew.
