Chipa guasu translates to 'big chipa' and is a beloved Paraguayan side dish, especially popular during the corn harvest season.
A soft, spoonable Paraguayan corn casserole — fresh sweetcorn baked with cheese and eggs into a pudding-like dish, a lighter cousin of the country's famous chipa bread.
Blend the corn kernels coarsely, leaving some texture.
Mix with cheese, eggs, milk, softened onion, and melted butter.
Pour into a greased baking dish.
Bake at 180C for 40-45 minutes until set and golden on top. Serve warm, spooned straight from the dish.
Leaving some texture in the blended corn gives chipa guasu its characteristic soft, slightly chunky bite.
