Paraguay's national dish. Legend says it was created accidentally when a cook added too much corn flour to a soup for President Carlos López.
Paraguay's iconic corn bread — a thick, savoury cake of corn flour, cheese and onion, baked until golden. Despite the name, it is not a soup at all.
Preheat oven to 180°C. Fry onion in butter until soft. Cool.
Mix corn flour, cheese, eggs, milk, butter and onion. Season.
Pour into a buttered baking dish. Bake 45 minutes until golden and a skewer comes out clean.
The centre should be just set — slightly moist is correct. Overbaking dries it out.
