Koofteh Tabrizi

Iran

From Tabriz in northwestern Iran. The giant meatballs with a surprise inside are a theatrical dish.

Tabriz giant meatballs — enormous herb and rice meatballs concealing dried fruit and nuts inside, slow-cooked in a tomato and turmeric broth. Azerbaijan's gift to Iranian cooking.
