Bulgogi

South Korea

Bulgogi means fire meat in Korean and dates to the Goguryeo era (37 BCE). One of the first Korean dishes to become popular internationally.

Korea's beloved fire meat — thinly sliced beef marinated in sweet soy, pear and sesame, grilled until caramelised. One of the world's great marinades.

600gbeef ribeye, very thinly sliced
4 tbspsoy sauce
2 tbspsesame oil
2 tbspcaster sugar
halfAsian pear, grated
4garlic cloves, grated
4spring onions, sliced
1 tbsptoasted sesame seeds

Method

1

Mix soy, sesame oil, sugar, pear and garlic into marinade.

2

Add beef and spring onions. Marinate at least 1 hour.

3

Grill over very high heat 1-2 minutes per side until caramelised.

Cook in batches. The caramelisation is key.

5

Scatter sesame seeds. Serve with rice and lettuce for wrapping.

Chef's Tip

The grated pear tenderises the meat and helps caramelisation — do not substitute with apple.
