Europe's great dishes are often supported by a small sauce that does a lot of work: a spoonful of herbs, a pot of berries, a creamy white sauce. Here is a tour of some of the best.
These sauces come from very different kitchens, but they have something in common: each one is built from a few simple ingredients and is quick to learn. They are the kind of recipes that become habits.
Pesto Genovese comes from Liguria, and its name comes from 'pestare', to pound. Basil, pine nuts, garlic, Parmesan and olive oil are crushed into a thick green sauce. Stir it into gnocchi or pasta off the heat, loosened with a little cooking water.

Pesto is the quickest way to make a pasta dinner feel special, and béchamel is the foundation of dozens of baked dishes. Once you are comfortable with those, try something less familiar, such as tkemali or skordalia, for a new flavour on the plate.
Almost all of these can be made ahead and stored, so a single afternoon of cooking can fill the fridge with the makings of several meals.
